Good news, everyone who likes delicious food. Butter isn't bad for you anymore. Some people, like author Elaine Khosrova, even think it's good for you. "It's the fake stuff we try to substitute for butter that's doing us serious harm," she writes in her new book "Butter, A Rich History." Opt for organic, unsalted butter made from local, grass-fed cows and slather (in moderation) on the benefits. Here are five reasons you need to eat butter.
1. It's filled with good things like calcium, potassium and vitamins A, D, E, K and B-12. And like those healthy fats found in salmon and avocado that everyone's always pushing on you, butter has Omega-3 and Omega-6, too. Butter has some polyunsaturated fats, the same found in nuts and seeds, and monounsaturated fats, the kind that lowers cholesterol.
2. Margarine, the butter substitute of the '70s, is actually way worse. According to Khosrova, studies show that “Margarine increased the likelihood of a heart attack." Makes sense considering it’s made from stuff like diglycerides and soy lecithin. Good rule of thumb: if you can’t pronounce it, don’t eat it.
3. It's great for diabetics and fights cancer. The fatty acid butyrate - accounting for four percent of butter - improves a person's response to insulin and increased energy in mice, according to the American Diabetes Association. Butyrate is created in the colon and may be a means of protecting the organ against cancer, just like conjugated linoleic acid, a colorectal tumor and breast cancer fighter also found in butter.
4. Butter reduces obesity. A 2012 paper published in the European Journal of Nutrition showed that eating dairy products considered "high fat" had no link to obesity. The study discovered that those products actually don't increase the risk of metabolic diseases but do, in fact, slightly reduce the risk of becoming obese.
